Well I survived Thanksgiving. Whew!! We were to have a house guest for 1 week and he decided not to come. Ok. I’m not mad at him. In the meantime – I cooked turkey, gluten free dressing, salad, sweet potaoes, greens and had pumpking pie. Done! It took every bit of 3 1/2 hours to prepare and 7 minutes to eat.
We watched the documentary “What the Health.” Before it was over my husband, Terry, said “I’m in. Let’s do this.” Wow , shocked me. So, we started a vegan diet. He is 100% , I’m quasi. I refuse to throw away food I already have in the refrigerator. I will eat it until it’s gone and just not replace it. OR replace it with dairy free items. I put what was left of the turkey in the freezer. I will save it for when Terry falls off the wagon. I have not been able to really eat turkey anyway because it activates my gout. So, today is day 6 for Terry and day 8 0r 9 for me (sort of). I have had eggs.
Previous, to going vegan, I had suggested to Terry in order to make it through the holidays unscathed from sugar issues, I said let’s have 1 (one) dessert a week. NOT 1 piece but 1 cake or 1 pie, 1 pound of See’s Candies, etc. He said no. He wasn’t going to restrict himself to that. I am standing by that one. So far, so good. We went out yesterday , I took a snack pack of “safe food.” We were offered a variety of Christmas cookies to eat there and to take home. We refused. One thing, they weren’t vegan and I wasn’t going to sabotage my dessert formula. I bought a pound of See’s Candies and started on them Wednesday. I still have some left. I have been eating 3 -4 pieces day. I have not felt physically any particular way, good nor bad. So far, so good. They won’t last til next Wednesday and I’m good with that. I have to schedule my holiday desserts. Hold up, let me call my girl for her FAMOUS pecan pie, Ok, she has me on her list. Now I have schedule that in on my dessert calendar. For real – this is work!
Surprisingly, we have not had gravings. Miraculous!! I have bought prepared foods from Whole Food and Berkeley Bowl. I MUST start using my vegan cook books ‘cus it’s expensive to buy out ALL the time. I am NOT creative in the kitchen. I have about 4-5 vegan cook books and EVERYTHING looks so labor intensive. Damn!! I’m too lazy for this crap. Gotta do what I gotta do, tho. UGH I signed up for online support with a mentor AND it’s free. I sure hope this works.
I can report that yesterday night, while going to the bathroom, my legs and feet felt better. I didn’t feel as stiff and crickety. I work at my compurter hours at a time. Usualy, I am SO stiff and crickety getting up. Today, I don’t feel so crickety. I need to keep a medical journal of how I physcally feel on a daily basis. I notice small changes(some good , some not so good) and should document them.
Moving along on the lourney of life with great expectations of SUCCESS through these holidays. I feel better already. You remember the book by Elijah Muhommad – Eat to Live? Well, here I am 30 + years later JUST getting what he was talking about. It’s never too late. Thank God!!

Just tried so fake chicken nuggets from Trader Joes. Real good and easy to fix. My husband went out and bought more. It’s a WINNER!!
